...doing a recipe swap? Hear me out:
Often times my biggest struggle with weight loss/maintenance is that I get stuck eating the same things or types of things. When this happens, I get bored and eventually fall off the wagon. So, I have decided to try something new. Dinner has always been the meal that gave me a run for my money (I typically work 10 to 12 hour days and am not a skilled cook), so I have decided to give each night of the week a different theme. For instance, Tuesday's have become synonymous with tacos. So, therefore Tuesday's have become "Mexican" food night in my house which opens the door to so many things to eat rather than just tacos.
I love Pinterest, and will be going there for some inspiration, but at the end of the day, I want something a little more nutritious and not quite as complicated. Hence the recipe swap.
Any takers?

I made this slow cooker chicken burrito bowls tonight and you can let it simmer in the crock pot. I modified the recipe and used regular rice (I partially cooked 1/2 c white rice and added near the end) and only added a little cheese on top. As a California girl, I love Mexican food and this dish tastes amazing. I also added mild diced green chiles to the recipe and if you like spicy, you could add hot sauce, jalapeños, or hot chiles, etc. I topped with shredded romaine lettuce, sliced black olives, diced avocado and a dollop of plain Greek yogurt. Mmmm.

No Dough Pizza
I've been making it for years!
Use a lb of ground beef or turkey onion and Italian seasoning and any others you like. Brown in skillet. Drain. Mix in bowl with 1/2 c of mozzarella cheese, lay out on pizza pan. Low sugar pizza sauce spread. Add m. cheese and any topping of your choice bake in oven 425 for 15-20 minutes. Delicious!0
