Savory Baked Snapper recipe

Snapper season just closed in Florida. We have the good fortune to eat fresh caught red snapper this time of year. Here is a recipe that is good with snapper or any other mild white fish suitable for baking.

Savory Baked Snapper - serves 4
Ingredients:
4, 4-oz. snapper filets
1 minced garlic clove
3-4 drops Worcestershire sauce
2 teas. dried parsely
1 teas. freeze dried chives
1/2 teas. Emerill's Essence BAM Cajun spice seasoning** (I make this homemade using Lite Salt) :wink:
1/8 teas. fresh ground black pepper
1/4 cup homemade whole wheat bread crumbs
4 Tablespoons Smart Balance Omega 3 Spread
2 Tablespoons freshly grated Parmesan

Place snapper filets in a single layer oven proof baking dish that has been sprayed with Butter Flavor PAM. In a small skillet, melt Smart Balance spread and add garlic, Worcestershire, Cajun seasoning, black pepper, parsley and chives. Cook on low for 2 minutes, just to blend flavors. Brush this mixture evenly over filets in baking dish. Toss whole wheat bread crumbs in a small bowl with the grated Parmesan cheese. Pat this mixture over tops of filets in baking dish. Bake in a 400 degree preheated oven for 12 minutes or untl fish flakes easily and is no longer translucent. If filets are thicker you may need to bake longer. Serve immediately.

    Thanks for the recipe. Where I live we often buy Alaska True Cod for a reasonable price. I usually season it, spritz with olive oil and scatter cornflake crumbs on top and bake as you do the snapper. This recipe has a little more kick. I'll try it.
