Acorn squash

So, I was eating pumpkin until it went out of season. I had a stash left over until last week. I was wondering what I could get to replace it because I just loved the flavor and texture.
Fall 2015 and Spring 2016, I was heavily into butternut squash, but for some reason I don't like it now. Last week, I roasted acorn squash. Voila! I found my pumpkin replacement, and they are not seasonal.
They are very good. So, I will be eating my share of that for the foreseeable future. So excited.

Next season, look for a variety called Fairy Tale pumpkin. I discovered it this year for the first time and it blew my mind.1

I didn't see these in Whole Foods when pumpkin was in season. I only saw the sugar pie pumpkins. I googled this. It looks good though.0 -
I love acorn squash. I roast it in the oven with some olive oil - delicious.0

I baked a sliced one in the oven with S&P and some cajun spice on it. BBQ to dip. Really great.0

Love this food - very filling and very tasty. I had a habit while growing up of baking in half and filling the cavity with butter and brown sugar - kind of defeats the purpose. How do you serve this food?0

I just bought another acorn squash this Saturday. I'm very thankful to cooking for introducing me to eating more squashes. My favorite was either butternut or the delicata squash I was only able to find at Trader Joes.

Kabocha is very good, too.
I love butternut/acorn squash mixed or made into soup.0 -
Ive seen kabocha but honestly don't remember where or when. I'll definitely keep my peepers open for it!0

I love acorn squash, and prefer it to butternut, although I like both. Good choice! ;-)0

I love all of the squashes. Acorn also makes a very nice soup. I cook it in chicken stock with the peel on and puree the whole thing. Add minced onion, a chopped apple, and sage or curry powder with a dash of red pepper flakes. Sometimes add a cup of milk or cream to the mix but usually not.1

Acorn is my favorite winter squash. I leave it in the fruit bowl with the other fruits to ripen another week before cooking it. If I can keep my hands off that long.
^^shadowfax, do you scrape the seeds out first or do you puree those in there, too? Do you end up with green bits of skin in your soup?0 -
How do they compare in sweetness to butternut squash?

Buttercup squash is the best. Next would be butternut. Then acorn squash. From what I remember. I've thought this way for so long that I haven't purchased an acorn squash for maybe 10 years. You all have inspired me to try one again.0
