Hi All
Do any of you have any sweet potato recipies, I've recently bought them whilst shopping but have no idea what to do with them :-)
Please no, beef/lamb/pork (steaks) recipies, however minced beef/sauages are ok (Strange I know) I'll eat chicken, and most fish!

Personally, I just bake them in the microwave and sprinkle with salt and pepper. I will also make baked sweet potato fries by cutting them into strips or wedges, spray with oil and sprinkle with salt, pepper and any other seasonings you like. Cajun seasoning works well too! Bake for about 15-20 minutes at 350-400 degrees flipping them halfway through. Yum!0

I do the same, just bake them as wedges, they're so sweet and tasty that they don't need anything else.
I also bake one in the microwave until soft and then split it open and scoop out the middle for some instant sweet potato mash, I think it's much nicer than white potato mash.0 -

Hi,
You can marinate pork loin in soy and honey then either pan fry with 1cal spray so less calories.
With it, do sweet potato mash with ground ginger (about half to a teaspoon full) and a little light butter/marg and some green beans/calabrese brocolli - lush!
You can find various recopies on line - that's where we found ours.

I love cheesy things so one time I made a Broccoli, carrot and sweet potato cheese recipe. Was really nice and surprisingly low cal per serving.
You make it like you would macaroni cheese or cauliflower cheese in that you cook all of them first (boil/steam?) put the carrot and broccoli in a dish, cover with sliced sweet potato. Mix up some cheese sauce (I used the packet kind with milk but you can make your own) and add over everything. Then you can add extra grated cheese if you want.
I used:
340g sweet potato
200g broccoli
221g carrots
40g packet of "schwartz cheddar cheese sauce" with 300ml of semi skimmed milk
It made LOADS definately enough for 2.
Nutritional info (for the whole batch - without added cheese)
753 cals
130g carbs
12g fat
31g protein
5g saturated fat
1371mg sodium (this would be lower if you made your own cheese sauce instead of the packet)
Only thing I didn't like much was not great for protein but you can add chicken to it if you want. I've had macaroni cheese w/ added chicken before and it was nice :-)
