Chipotle Pasta Salad

There is a grocery store where I live that sells this stuff from their deli and it is TO DIE FOR. But of course, mayo based etc etc so I decided to invent my own version. It's so addicted, and full of goodness for you! Enjoy!
Approx 1/2 pound whole wheat pasta (I used elbow but I want to try fusilli if I can find it)
1 avocado, peeled
Approx 3/4- 1 cup Plain greek or lowfat yogurt (I use organic)
chipotle peppers in adobo sauce (in the mexi aisle at your grocer)
ground chipotle peppers (probably optional, but I was experimenting so I added them)
frozen or fresh kernel corn cooked
broccoli slaw
shredded carrots
shredded sharp cheddar or pepperjack (i used raw milk sharp cheddar)
juice from one lime
salt
pepper
Mash avocado with lime juice until desired consistency, then add greek yogurt until it looks like you have enough to coat your pasta lol. In a food processor, blend chipotle and sauce until smooth and add it by the spoonful to the yogurt mix to taste. It's kind of spicy, so be sure to do a taste test. Season with salt and pepper.
Cook pasta as directed. Toss with sauce than add desired amount of corn, slaw and carrots and mix. Let cool a little before adding cheese so it doesn't melt.

Sorry I don't know the calorie count. I don't watch my calories closely and I'm mainly on a raw diet, for the most part. Eat and it and enjoy the taste, everything in it is good for you and has nutritional value!0
