Calabacitas con elote

I made this for dinner tonight, and it was delicious and simple. I found the recipe on allrecipes.com, but changed it a little.
4 cups zucchini
1/2 cup onion
3 roma tomatoes
1/4 cup jalapeno
one ear fresh corn cut off the cob
1 clove garlic (minced)
1/2 teaspoon coriander
2 teaspoons olive oil
about a Tablespoon fresh cilantro
2/3 cup mozzerella ( or any cheese)
Saute the garlic and onion in the olive oil, until soft. Then add the zucchini, coriander, corn and cover for about 10 mins. Then add the tomatoes and cover with cheese. Let the cheese melt and its ready. I entered it as 2 portions and it was 267 calories. It was alot though. I just cooked a piece of tilapia, and dinner was done.

It was really good. I get tired of plain steamed zucchini and onions, so this was a great new way.
