120 cal Pina Colada

Just read this recipe in Martha Stewart Living. Looking foward to trying it! I love Pina Coladas but do not love the fat and calories in traditional ones!

Puree 2 cups pineapple chunks, 3/4 cup pure coconut water, 1/2 cup ice cubes, 1 tablespoon sugar, 1 teaspoon fresh lemon juice in a blender. Stir in 1/2 cup rum and garnish with toasted coconut. Serves 4.

    Oh, you better believe I'm saving this! I LOVE PINA COLODAS!!!!! Here is my (non-healthy) recipe:

    almost 1/2 blender of ice
    as much rum as you want (the more the better)
    --- blend together as much as you can

    1 20some oz can of pineapple (i used crushed)
    1 tall can (about 5 inches or so) cream of coconut (i use coco lopez brand)
    --- blend all together and enjoy!

    I have a 60 oz blender. When this is done, it will be to the top of the blender.


    It is THE BEST ever! (But as mentioned --- NOT healthy!


    When I added this to my recipes, I put that it was 6 servings. Each serving was about 325 calories (I think). Well, I kinda lied on the serving, although that night I drank about 1 serving. Before I started on here, I could -- and would -- drink 1/2 of the blender!!!

    I will sub the sugar for truvia. I don't think that would change it much other than less calories.
