Here is a good and healthy recipe. Thought I'd share.
Chicken with Mushrooms in the Crock pot
- ~3lbs chicken
- 3 pints mushrooms diced and cleaned
- 3 regular sized cans cream of chicken soup (low sodium if possible!)
1. Spray your *kitten* pot with pam, I have a 6qt crock pot
2. Put in the raw chicken breasts
3. Top with mushrooms
4. Top with cream of chicken, spread evenly
5. Cook on high for 4-6 hours
It is somewhat soupier than you'd expect. It would go great over rice, quinoa, cauliflower/rice, noodles, or in my case asparagus (it's all I had!).

It started to break apart as I moved it, but because it made so much I had quite a bit of leftover and the chicken breasts I only broke in half for easier storage.
Next time I think I'm going to make it over cauliflower rice, it would sop up the extra juice and taste great with the chicken!0 -
I made slow cooker Coq au Vin last week...it was amazing over garlic mashed potatoes.
14 oz bag of baby carrots
14 oz bag of frozen pearl onions
8 oz of mushrooms, sliced
9 Chicken Drumstick/leg Raw
4 fl. oz/half a cup, Pinot Noir (or any dry, red wine)
2 packages of Lipton Beefy Onion Recipe Soup & Dip Mix
1.50 tbsp, White flour
The first six ingredients go in the crockpot in the order shown. Sprinkle one package of the soup mix over top. I set mine for 7 hours on low (but I also threw the chicken in frozen). Once done, take out the chicken, put the liquid and veggies in a pot, add the second package of soup mix and flour, bring to a boil and reduce to make a gravy.
It was amazing. I made it into nine servings (1 leg with about 2/3 cup of gravy/veggies)

I make slow cooker Mexican Chicken
Boneless Chicken Breast (5 Breasts)
1 Package of Mrs. Dash Taco Seasoning
1 Jar of Salsa (I used Chi Chi's)
1 Can (Drained) of Green Chilies
1 cup of onion
1 cup of bell pepper
Slow cooked all day.

Yikes, I am not cooking kittens! Evidently my phone autocorrects crock to kitten!
I have a new recipe for anyone who is interested: crockpot chicken stuffing.
- 2-3 lbs boneless/skinless chicken breasts
- 2 boxes stuffing mix, not cooked
- 4 cups chicken broth
- 2 cans cream of chicken soup
- 2 bags frozen string beans
1. Spray pam in the crockpot, then place in your chicken
2. Cover with the conents of the two boxes of stuffing
3. Top the stuffing with the cream of chicken soup, spread evenly
4. Pour in your chicken broth, it will just pass the level of the stuffing
5. Top everything with frozen string beans
6. Cook on low for 8 hours
When it is finished it will be somewhat soupy, just let it cool and it will firm up. This is a great dish for meal planning for the week. Also feel free to make healthier substitutions. I couldn't find a particularly low cal or high fiber stuffing mix. Also, be careful when recording calories. If you put it in the recipe maker it automatically assumes you are making everything as directed on its container, so the soups and stuffing will have much higher calorie contents than in this recipe because you aren't adding in any butters or milks or creams.0
