    I suppose it depends on the meat though....if it is bone-in, then it really needs to be pounded to release the juices and protein. If it is bone-out, well probably no sense in pounding it much....

    I pound my meat three times a day. I try to have a protein with every meal.

    Actually, it depends on what I am preparing it for.

    If it is for a solo engagement I pound it till some the juices come out out and the meat goes limp.

    If it is for a more casual setting with friends, then a nice spicy dry rub, massaging the until the rub is marinating the meat and then I let it rest before a nice slow cook.

    For a more formal occasions or when first meeting new friends I will marinate the meat first paying particle attention to what the friends needs or what their preference is.

    If it is with an old acquaintance we just get down to the meat of the matter and go all caveman.

    So it is very situational. just saying ...................

    Good lord, dont forget about pulled pork. When it is prepared just right it can leave an explosion of salty goodness in your mouth.
