Bored with 'courgetti spaghetti'? Try 'Leek Liniguine'!

I enjoy 'courgette spaghetti' as a healthy alternative to pasta. I recently extended the idea to 'leek linguine' for a change:
Top and tail a large leek. Cut in half lengthways. The middle few rings are thin enough - cut the out rings again to make ribbons. Boil (<5 mins) and add your favourite pasta sauce.
Scrummy - and only 30 calories for 100gm.

    Not liking most of the veg used for this sort of thing, I've often used leek.

    Only problem is it's easy for it to go mushy.

    Recently got some prepared 'sweet potato spaghetti' from the local supermarket and it was surprisingly good.
    Of course, being made from sweet potato, it's a got more calories than leek.
    Might try making some myself next.

    I love Courgette prepared this way in my stir fry really bulks it up.
