BBQ Pork Fried Rice

The next of my Asian (Chinese) meals reworked for a low calorie version, BBQ Pork Fried Rice.

A fast and easy homemade BBQ Pork Fired Rice at around 275 calories per 2/3 cup serving.

Recipe for 4 2/3 cup servings:

3 cups - Minute Rice (Brown) pre-prepared and refrigerated
3 ounces - Yangtze Chinese Style BBQ Pork - diced
1/2 cup - onion - diced or chopped
1 - large egg
2 tbsp - peanut oil
2 tbsp - soy sauce
1 stalk - green onion for garnish

In a non-stick wok or skillet heat 1 tbsp peanut oil
Break egg into wok and scramble until done (stir briskly to make small pieces)
Add 3 ounces of diced BBQ pork and stir rapidly until hot (1 minute)
Remove from wok and set aside
Bring remaining tbsp of peanut oil to heat
Add rice and onion, stir fry until hot, once hot add back egg and pork, stir in.
When all ingredients are heated remove from heat and stir in 2 tbsp soy sauce

Shown here with 4 ounces of home grilled teriyaki chicken with 2 tbsp of teriyaki sauce (recipe coming soon) 180 calories.
