Meal prep recipes needed

I'm looking for recipes that I can make 1-2+ weeks in advance that are healthy for me and my fiancé. Breakfast lunches and dinners
My fiancé is a truck driver, he likes big portions and doesn't have the ability to heat food at work but can use a microwave at home and occasionally the oven or crockpot.
I'm a cook at a bowling alley. I can use the grill or microwave to heat food up as long as I don't bring nuts into the kitchen. I'm also allergic to avocados, olives, basically anything with a pit, and don't have time at work to eat normally maybe a bite here and there. It has taken me 6 hours to eat a bagel before. Both of us work nights so we try to avoid heavy dinners because dinner is usually eaten before bed which is roughly 2 am for me and 6am for him.
He's not big on smoothies I like them. He has a problem with portion control. So I really want to be able to make meals that can be refrigerated or frozen and reheated.
Please if you have any tips on meal prep or recipes please share.

goodtoknow.co.uk is a FAB website for recipes, I cook mostly from there and bbcgoodfood. I tend to do clean eating, that way everything is fresh and not processed, so the portion size isn't as "big" an issue as everything is veggie based and fresh. Some ideas to get you started
Overnight oats for breakfast! You can make batches of these for a week and they'll keep in the fridge no problem, or batch freeze smoothie bags for yourself, fiance could always have the fruit with yogurt/honey instead of a smoothie.

Again since it's all fresh, portion isn't so much of an issue. I also substitute the rice for cauli rice or cous cous to mix it up a little.

Chili is a great option. Make a huge batch and freeze in individual portions for work reheats. There is a great recipe for white chicken chili on Pinterest that uses frozen chicken breasts so literally takes 5 minutes to put in the crockpot. I think it is called Crockpot Magic White Chicken Chili. For red chili I use half really lean ground beef and half lean ground turkey - tons of flavor but a lot healthier. And pump up the beans to make it really filling.
Lasagna is great for that too. Find a crockpot sauce recipe so you can control the sugar and salt and then just assemble a few and pop in the freezer. You can either replace the noodles with thin sliced veggies (zucchini, eggplant, etc...) or do half and half (top and bottom layer are noodles, middle layers are veggies) and I also add a bunch of mushrooms with or instead of the meat filling. I buy the aluminum throw-away pans so I also don't have to worry about cleanup.0 -
How about breakfast for dinner. You can prep omelet fixings in a mason jar. He can microwave his and you can do a scramble on the flat top. Check out Hungry Girl and the Eggbeaters website.
