Ok, this is the first recipe that I have shared- let me know how you like it!
8 bell peppers- tops removed and washed
20 oz 99% fat free ground turkey
2 servings quinoa or brown rice- cooked
2 tomatoes (chopped)
1 onion (chopped)
Worcestershire Sauce- to taste
(I also have added things like sugar free ketchup (5 cals per serving), steak sauce (30 cals per serving), and mustard (5 cals per serving). Other things you may like to add are garlic, pepper, balsamic vinegar, basil, etc)
Boil hollowed peppers in water for 5-10 minutes (unless you like them crunchy- like I do).
Brown the ground turkey in a pan. Once browned, add the chopped onion and Worcestershire Sauce sauce- let simmer until onions are soft. Add chopped tomatoes to the mix meat mix. Stir in other spices and dump in large mixing bowl. Add rice or quinoa. Mix together. Scoop entire mix into the 8 hollowed peppers. Bake at 350 for 15-20 minutes.
I have also added a slice of reduced fat cheese on top.
Without any sauces (except Worcestershire Sauce) it is about 270 cals per pepper. Add cals accordingly based on sauces. about 3-5 grams of fat. ENJOY!
