Aquafaba.... anyone try it?

It's the liquid from cooked beans (think juice in a can of chickpeas). It can be whipped up into meringue, marshmallow fluff etc looks like a perfect substitute for egg whites for vegans and 3 cals per tbsp which is aparantly the equivalent of one egg white. I've not used it myself yet.... anyone else try???

I played around with it. If you're using the chickpeas for something else, it's free. The one thing I found is it doesn't last - you need to consume the fluff soon after whipping it. I didn't do any baking with it, so I can't comment on that.0

This is a very good point thank you for making it. I stumbled across this idea looking for a alternate to marshmallow fluff which is used in the protein bars I love I wanted a low calorie sugar-free version and stumbled across aquafaba. Now I know it won't work as it doesn't hold up. However the meringues look pretty great!0

Found a recipe in Google search for Aquafaba meringue 'cookies'. Must at some point be able to bake it.0

yes i saw pavlova, french macaroons baked meringues and key lime pie0 -
Baking would set it, I think. I just had it whipped in the fridge, and it doesn't hold the whip. It was good, though!1
