I started logging my intake and being very cautious of what I ate. I always weigh my food. In 3 weeks I have went from 371 to 352 pounds. Not to mention I've loosened up and am getting an ice cream cone every other night :)

You have more room to eat (ie a couple hundred calories not even counting exercise) to properly fuel and prevent cravings and binging if you're still hungry at night and still maintain a proper calorie deficit. Otherwise you've been losing, so I'm not sure what you're looking for as far as how you're doing.

Well as in I'm supposed to be eating 2200 calories, and I've only been consuming 1500-1600 roughly. That being said, I am not hungry at all. I don't get any cravings, but at the same time is it hurting me to not get to 2200?

I don't think that's bad, but I just wouldn't go less than that because you can end up developing nutrient deficiencies.

That's too aggressive for weight loss. You shouldn't be trying to lose more than 1% of your current weight per week. Maybe try having an ice cream cone every night instead of every other night.
