Crockpot Recipes?

I just got a crockpot and am making a vegetable beef stew tonight! I love the idea of having freezer bags ready to go to make and easy week night dinner. Does anyone out there have healthy recipes to share?

I always make this taco bean soup. Takes like 5 minutes!
1 can rinsed black beans
1 can rinsed kidney beans
1 can rinsed corn (or some frozen corn)
1 can diced tomatoes (spicy red pepper)
1 chopped yellow onion
I add some cayenne and tumeric
I also add some taco seasoning
1 box vegetable broth
That's it! It's so good and filling too!5 -
Here's my favorite crockpot cookbook. I wouldn't call the recipes simple, though. They tend to involve a lot of upfront prep. When in a hurry I simplify by using ground spices rather than grinding whole and sometimes I skip the common step of browning meat.
The Gourmet Slow Cooker: Simple and Sophisticated Meals from Around the World
I like:
- The Midas Feast (lamb and lentil stew)
- Chicken Mole (until my Mexican friend told me to just use jarred sauce, lol)
- Irish Cheese Pudding (brought the crockpot and ingredients to work and made this for my coworkers)
- Beef Burgundy (a staple recipe)
- Pea Soup
- Pot Roast
- Chicken Cacciatore (another staple, but I just use this recipe as a starting point)
- Beef Biryani
- Chicken in Saffron Tomato Cream Sauce (aka Tikki Masala and another favorite of my coworkers)
And of course I will be using my crockpot next week for Corned Beef and Cabbage.0 -

Some of my faves:
Hot Italian Sausages: put a pack of sausages, a sliced up onion and a sliced up green pepper (no water) in for 8 hours on low. Eat as is, or with a bun if your calories allow.
Baked potato soup - I do a double batch, but if your slow cooker is less than 6-7 quart do a single:
Ingredients:
1 30oz. bag of frozen diced hash browns
1 32 oz box of chicken broth
1 can of cream of chicken soup (10 oz)
1 pkg. cream cheese (8 oz, not fat free)
3 oz bacon bits
8 oz package shredded cheddar cheese
salt and pepper to taste
Directions:
Put the potatoes in the crockpot. Add in the chicken broth, cream of chicken soup and half of the bacon bits. Add a pinch of salt and pepper.
Cook on low for 8 hours or until potatoes are tender.
An hour before serving, cut the cream cheese into small cubes. Place the cubes in the crock pot on high. Mix a few times throughout the hour before serving.
Once the cream cheese is completely mixed in, it's ready to serve.
Top with cheddar cheese and some additional bacon bits.
Pork loin: Cook on high 8 hours, season with salt/pepper/balsamic vinegar/soy sauce; add 3-4 cups waterSarahBelle43 wrote: »I just got a crockpot and am making a vegetable beef stew tonight! Note: if your kitchen scale has high enough capacity, weigh the slow cooker pot and write down its weight in grams. For soups, stews, chili: weigh the final product. Deduct the weight of the pot. That is your recipe's total grams. Enter in the recipe builder w/ the # of grams as the # of servings. Then weigh your portion and log. Such as today I had 300 grams of baked pasta for lunch. Easy-peasy.3

Do you saute the onion first or just throw it in raw? I'm assuming raw, but figured I'd better ask since I'm new to slow cooking.

Here's one I just made:
Beef, Sweet Potato and Tomato Stew
500 g chuck roast
10 mL olive oil
300 g sweet potato
200 g sweet onion
12 g garlic (about 3 cloves)
1 cinnamon stick
1 bay leaf
2 whole cloves
1 28 oz (793 g) can of whole peeled tomatoes
50 g dried apricots (about 8)
2 g dried basil
salt & pepper
Cut up chuck roast into 2.5 cm (1 inch) pieces, trimming off any tough bits. Heat up the olive oil in a skillet. Put in meat, season with salt and pepper, and brown for about 5 minutes.
Cut the onion into about 8 large pieces. Cut the sweet potato into 2.5 cm (1 inch) cubes. Finely chop the garlic. Put onion, sweet potato and garlic in the slow cooker, add the meat, tomatoes (including the juice), cinnamon stick, bay leaf, cloves and basil. Give it a stir. Set the slow cooker on low for about 6 hours (until the meat gets tender).
Cut the apricots in half. Add to slow cooker and give it a stir. Cook for another 15-20 minutes.
I eat it over whole grain couscous and get 6 servings out of the above.0 -

Brown some chicken wings....then throw them in the crock pot with a packet of knorr vegetable dip mix and a little water....yummy yummy yummy!1

My personal favorite:
Ancho Chile Beef and Black Beans
1 tbsp, Spices - Paprika
1 tbsp, Spices - Chili powder
1 tsp, Ground Cumin
1 tsp, Spices - Oregano, dried
1 large, Onions - Raw
8 clove(s), Garlic - Raw minced
2 Whole bay leaves
2 dried Ancho chiles seeds removed
2 cup, Beans - Black, cooked, boiled, without salt (or 1 can, rinsed and drained)
2 cup, Beef Broth, Low Sodium & Fat Free
1 container (1 4/5 cups ea.), All Natural Petite Diced Tomatoes (No Salt Added)
1 large, Green Bell Pepper
1.5-2 lb, Beef, Bottom Round Roast, Raw cut into cubes
Cube the beef. Cut up vegetables. Dump everything into crock pot and cook on low for 8 hours. Remove bay leaves and either remove ancho chilis or cut up and stir in.
I usually get anywhere from 4-6 servings depending on how much beef I have to make it. Average is 400 calories per serving but enter it in your recipe builder to get the exact amount for your dish.0 -
