Ok, so I received a ginormous bunch of chard in my co-op box today. Any ideas on how to cook it and make it not so bitter and gross? What are your favorite chard recipes?

    Stir frying chard is fantastic! I add it with spaghetti and tomato sauce. You can add some basil, oregano and a tiny bit of pepper and it tastes amazing.

    I also like adding lemon juice to it- that makes it zesty! Chard with any mixture of fruit makes the taste less bitter/gross.

    Although I am pretty crazy- I just throw it in my salads!

    Make pesto! Use the chard leaves (raw) instead of basil. Add in some nuts, cheese and olive oil and blend away in your food processor. So delicious over pasta, grilled chicken, veggies or on sandwiches.

  • Chard is great in marinara with any pasta, but I love it sauteed with a little lemon and balsamic vinegar. Delish!

    Saag - indian greens curry. Totally guiltless too. I use Greek yogurt, skip the cream and double the spices/onions/garlic/ginger from this recipe, but I like my food to punch me in the face. http://www.whats4eats.com/vegetables/saag-recipe

    We make a pilaf with rice and beans or lentils. Chop the greens finely, saute in a little olive oil (perhaps with garlic), add 1 cup rice, 2 cups water or veg stock and 1 drained can of lentils or black beans. Then just cook like rice. Easy and tasty.

    I saute it with a touch of EVOO and lots of fresh chopped garlic. Also, keep as much of the stem as possible...its less bitter then the leaves.
