Can anyone recommend yummy healthy recipes for lunches on the go and for suppers with picky kiddos??

For lunches put together some bento-type boxes with an egg, cheese, fruit, veg, and nuts/seeds. I also like the wasa crackers with hummus or laughing cow cheese and topped with some lunch meat.
Stir-fry is also a great option for leftovers and for picky kids. You can use what they like and just serve yours with a double helping of veggies and use brown rice or quinoa.
Spaghetti is another kid friendly meal with great leftover options. Find a recipe for a crockpot sauce so you can make a big batch and control the added sugars. Make meatballs using ground turkey or turkey sausage (I mix the two to maximize flavor while controlling calories) and serve yours over whole wheat pasta or zoodles. For leftovers you can make up light chicken parmigiana - lightly season and grill/sear a chicken breast until just barely done. Place in your to-go dish of choice and top with leftover sauce, some shredded mozzarella and Parmesan and fresh ground pepper. I will bring a slice of whole grain bread as a side to soak up sauce. You can throw in some trimmed green beans for a veg as well.
Chicken pot pie is also good. Just use 2tb butter to sweat some onion and celery until soft, add a clove of minced garlic and 3TB flour and stir for 2 minutes. Whisk in 1 1/2 c. chicken broth and 1/2 c. milk until thickened. Season as desired (salt, pepper, poultry seasoning, Italian herb blend, etc... I like adding a tsp or 2 of curry powder with the flour. Stir in chopped, cooked chicken and a bag of their preferred veggies. For minimal calories top with phyllo dough. A can of biscuits also works. Use the smaller size and split them in half.0
