Magic rice is my new favorite sub or swap for regular rice

Whoever came up with magic rice thank you. 1/2 regular or brown rice and 1/2 riced cauliflower. It still has the starchy rice texture, but about half the carbs and calories per serving.

I'll stick to my mix of half white, half brown. It's cheaper than cauliflower, lol

I actually like cauliflower a lot anyway so I do sub it in for rice in stir fry veggies sometimes, and mashed (S+P and a little fat free feta) with some stew instead of potatoes. It helps not to get yourself all amped up like it's going to taste like those things haha but it is nice and filling.
