the net calorie that i consume in 1 day is approximately 1200, but i think i consume a little less than that. i know my eating patterns are really messy and i'm trying to fix that!

Use MFP to track what you eat, so you know more than approximately.
How much hiit are you doing on 1-5

I wouldn't be doing actual HIIT 5 days in a row.... Interval training perhaps, but not HIIT.

Are you weighing and logging your food here? How confident are you in the calories burn estimations from your exercise?

Do you ever plan to rest during the week?

Hope you aren't doing real HIIT 5 days in a row as that would be a mistake.
Describe your routine, your fitness goals and your capabilities in more detail if you want meaningful advice.

I would consider a rest day rather than more cardio. Your body needs time to repair the damage you do.

5 days in a row, maybe you should rest or do stretching

you are supposed to work one muscle group day 1 and then rest for 24 hours so that your muscles get to build back up and work a different muscle group day 2. Only then can you repeat.
