Some days I wake up wanting a something salty for breakfast, sometimes something sweet. Either way, my toddler has turned me from someone who forced breakfast down, to a breakfast lover.

The problem with the sweet days is that so many options use up calories, and don't fill up my tummy. Even a bowl of special K is guilty of this. This is what I just ate, and I swear it tasted as good as a calorie laden muffin.

INGREDIENTS
1 c water
1/2 cup 1% milk
3/4 c old fashioned oats
1/16 t salt (dash)
1/16 t cinnamon (dash)
1/2 t vanilla extract
3 T Splenda
1/2 c frozen blueberries, microwaved until warm

DIRECTIONS
Bring water and milk to a boil, then add oatmeal, salt, and cinnamon and reduce heat to medium. Cook for 5 minutes, or until thickened to desired consistency, stirring often. Stir in Splenda and vanilla. Put in a bowl and top with the warmed blueberries.

I think this was 312 calories- and had 8 grams of fiber and 12 grams of protein!

*tip: this brand of frozen blueberries is so sweet, I had to triple check that they don't have added sugar.
