Leftover beef tenderloin and grilled squash, we grilled extra yesterday so we don't have to cook for a couple of days.

Just finished loading the slow cooker: Carne Guisada. Stew beef, diced tomatoes, red peppers, onions, garlic, cumin, oregano, chili powder, salt. To be served over brown rice.

Just had an egg salad for lunch. Tea will possibly involve tortilla wraps with cheese and whatever meat I can find in the fridge with some peppers and onion.

Probably going to be salmon, broccoli and potatoes or brown rice, but I haven't decided for sure yet.

It's not super protein-y, but... I'm having broccoli-cheddar baked potatoes and a side salad. I might throw a little ham on the potatoes, if that counts.

I am making pasta with a jackfruit ragu. It will have about 13 grams of protein which fits fine with the rest of my day.

If I remember correctly to what I planned, it's oven baked crispy drumsticks, roasted butternut squash, steamed green beans, and yellow rice for the family.

Meatloaf with baked cabbage steaks. Adding a baked sweet potato for hubby, who isn't low carb.

Pizza! After that, protein from tuna and peanut butter, but a man's got to do what a man's got to do.

Mixed Green salad with parm/croutons/jalapeno ranch. A baked/stuffed portebella mushroom. If I'm still hungry - a mini drumstick. haha.

I am having chicken thighs in sauce with cauliflower fried rice. I found an absolutely fabulous recipe for the cauliflower - combines carrots, peas, soy sauce, onions, spices, egg and the cauliflower and according to the MFP recipe builder, I can get 6 serves of 138 gms each for 143 calories. I like it very much - I am not much of a rice person, but I love cauliflower and this is just another way for me to satisfy my tastebuds. So for me, the whole dinner of two thighs and the "rice" comes out to 430 calories, leaving plenty for popcorn or cracker chips as a snack for later.

Today is a "fast" day so it's either egg whites or non-fat sugar free Greek yogurt.
