Welcome to the thirty-eighth round of the cooking challenge! This week's ingredient comes to us from RillSoji, the winner of the cilantro cooking challenge.
This week's challenge is KIWI.
These are the rules for the challenge:
1. You don't need to have created the recipe from scratch, but you DO need to make it.
2. Voting will be put up for the challenge and the winner of the challenge will pick the next ingredient to be used.
3. Pictures are encouraged but not required. If you want to post a picture upload it on a website like photobucket.com or tinypic.com . If there's any questions about how to do that, don't be shy to ask me.
4. You do need to post the recipe you used so other people can try it too, if they so please.
5. If you used a recipe from another source give credit to the original creator!
6. Your recipe can be a breakfast, lunch, dinner, snack, or dessert! Anything!

NAME OF RECIPE: HOney Kiwi Sandwiches
INGREDIENTS:
1/2 package Neufchatel cheese (4oz-it's with the cream cheese usually)
1 teaspoons lemon zest, finely chopped
1 tablespoons honey, or to taste
1/2 cup chopped kiwi fruit
8 slices whole wheat bread
DIRECTIONS:
In a small bowl, mix together Neufchatel cheese, lemon zest, and honey.
Refrigerate for 1 day to allow the flavors to develop. (Sometimes I do..sometimes I don't)
Spread about 2 tablespoons of the sweetened Neufchatel cheese over one side of a slice of bread.
Top with about 2 tablespoons of chopped kiwi fruit, and another slice of bread.

I like a little more zest and honey-but it's really to taste...

Annies Fruit Salsa and Cinnamon Chips (From Allrecipes.com)
INGREDIENTS
2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor
10 (10 inch) flour tortillas
butter flavored cooking spray
2 tablespoons cinnamon sugar
DIRECTIONS
1.In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
2.Preheat oven to 350 degrees F (175 degrees C).
3.Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
4.Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture

This is so very yummy! I've made it a number of times for various occasions and it is always DEVOURED by all. I love to make it for kids parties too. The kids usually love it and its super healthy! Without the cinnamon chips it is also great to top pancakes, waffles, and an indulgent ice cream
