Whats you favorite dinner recipe your whole family enjoys?

I am from the south as well as being Italian. I love to cook! I enjoy quick meals on work nites as well as other recipes on weekends when I have more time in the kitchen. I am looking for southern cooking recipes, mexican recipes, italian recipes, ANY RECIPE that you find as a good family recipe yet HEALTHY which helps in your weight loss! Thanks ahead of time for sharing!! I am planning my weeks meals and need to food shop!

Something my mom made the other night that I'd never seen/heard of before...but she said its super easy!
It was italian sausage (which you could substitute ground turkey for to make it healthier), cabbage, carrots, spaghetti sauce, and a little cheese sprinkled on top in a pan and I think she baked it. If you want more of an exact recipe, message me and I can ask her about it, but we all loved it and I even hate cabbage and cooked carrots! For a one cup serving, it was about 250-300 calories!0 -
fajitas - sautéed chicken breast, fresh veggies with some spices/hot sauce. put some low fat sour cream (sometimes, i even opt for greek yoghurt - less fat/calories but also good protein!) and a little bit of cheese on the table, and wrap it up in a whole wheat wrap! enjoy! or if you'd like to save the calories on the wrap, spread over some lettuce and make it a mexican salad! enjoy!0

Tilapia florentine ~ it is delish!
1 to 1.5 pounds tilapia (or other mild flavored fish)
1 box of creamed spinach
mozzarella cheese (I use about 1/2 a cup...but you can use more or less)
1/4 cup bread crumbs (plain)
1. Spray baking dish (I use a 9*13 glass ware one)
2. Lay fish in dish
3. Mix spinach and bread crumbs in bowl and spoon over fish.
4. Top with cheese
Bake at 350 until fish flakes easily ~ about 20 mins or so. I never set my timer...just check it often I have even used squeezed dry frozen spinach instead of creamed...but like the creamed spinach better This is a First Place recipe! Good stuff!
I have a good apple pecan chicken salad, too...I have to admit from "taking" the recipe from Wendy's. I LOVE that salad!!
Green leaf lettuce (I will add spinach, too...yes, love the stuff )
Grilled chicken (I will pan fry it in olive oil w/ garlic, pepper and a bit of bbq seasoning ~ dry)
blue cheese
chopped apples
dried cranberries
Marzettis raspberry viniagrette dressing (that is what they use...and I found it at Publix here where I live )
My family loves salad night as long as there is some good stuff added in there My 5 and 8 year old boys will really chow down on salad!0 -
I'm away at school right now so I cook for my roommates a lot. They really like my lemon pepper chicken. They also enjoy my meatloaf and pork chops/chicken breasts stuffed with feta cheese, tomato, and spinach.0

When I make tacos for the family, I go without the shell. I just get a big bowl, add LOTS of green leaf lettuce and then top it w/ taco meat (ground turkey breast or lean beef here), tomatoes, cucumbers, onions, cilantro and salsa. I am not a big cheese person, so I will forgo it.
Bear Creek makes an AWESOME minestrone soup ~ I know, not homemade, but it is incredible I add lean beef and halved grape tomatoes to it. I don't even like minestrone, but it is SOOOOO good!!

I'm not sure why my boys love this, but they do-and I will warn you, I really don't have exact amounts-I just call it my clean out the fridge artichoke basil chicken. We have a family of four and I make this in a big skillet-usually have about 2 cups left over.
Chicken-cooked and cut in one inch or so pieces.
Garlic, diced small, sliced mushrooms, diced red bell pepper, (I have added sliced carrots), Costco jarred artichoke hearts-sliced small so the boys eat it better, some of the juice/oil from the jar for flavor, and some whole wheat Penne pasta, or any other whole wheat noodles.
Like I said, I just throw it together-then at the end chop up some fresh basil and put it in!!! Weird recipe for a 8 and 10 year old to like, but they like it (my 10yo LOVES it!)0 -
Keep em' coming yall! So far they all sound awesome. I am just beginning my battle with the weight and making a fresh start of it after moving and falling off the wagon! My husband is a HUGE support and eats anything I make but chicken is not his favorite but mixed in recipes he likes it ok.. also what about crockpot recipes?? Any ideas?0

My family love a stir fry with red marinaded chinese tofu cubes in it. I add egg noodles and loads of veg and then make sure i get less of the noodles and more veg when i serve it up. We also eat alot of vegetable curries, with beans or lentils in.0

So I am italian too and I have such a hard time because of the pasta, but one of my go to weekly dishes is:
Whole wheat pasta- I cook the pound (for the fam) but eat 1 cup
I sautee:
2t of olive oil
2-3 cloves of garlic
2 T capers
1 can of artichoke hearts (in water- not seasoned oil)
1 bag of baby spinach
1/2 can of cannellini beans
squeeze the juice of one lemon
1/4 c of white wine
The sauce ends up being approximately 100 calories per serving- (i put all the those ingredients in and split it 4 ways for 100cal servings) and 1 c of pasta has 200 calories. So not bad.
I top it with 2 T of grated romano and it is delish!0 -
We also have fajitas once a week. We use the small corn tortillas, I sautee peppers and onions, sliced avocado, lettuce, low fat sour cream, black beans and hot sauce and lime juice! Yum!0
