Help- I need simple recipes please!
I have been able to make snacks, like cauliflower hash browns, but I am seriously a horrible cook, I just made zucchini noodles and was convinced that- with how I HATE HATE veggies- that it would be more hidden like cauliflower is in making hash browns... nope! I didn't like how crunchy zucchini noodles were, I cooked them with a shrimp recipe with lots of great reviews on Pinterest and yuck! Shrimp was rubbery and zucchini too crunchy, and it had no flavor, even though I added garlic and other spices, I just can't cook!!!
I also have tried doing a pan recipe in the oven of peppers and onion with pieces of chicken, and to get the peppers and onion soft how I like, I think by that time the chicken dried out!!!
I mainly eat Greek turkey burgers from the store, and make cauliflower hash browns, and also get food from a meal prep place. I'm an extremely picky eater- never raised to cook or eat fruits and veggies, so this is all new to me, and I want to be able to like something I cook but I keep screwing up! Anyone have any simple recipes, preferably higher protein and not overload on the carbs? Thanks!

Peach Pie Protein Shake
Ingredients:
1 peach, pitted
1/4 cup plain greek yogurt
2/3 cup milk
1 scoop vanilla protein powder
2 pinches of cinnamon
8 to 10 ice cubes
Add everything into your blender, putting the ice in last and blend until smooth. if you want to do the calorie count just go to food and click on recipes then add the ingredients and it will tell you how much calories are in it1 -
Cook up a batch of taco meat (I use the really lean ground turkey) and add in 1/2 can of low fat or fat free refried beans when you add the seasoning packet. Serve over salad greens with 1/4 cup salsa, some shredded cheese, and corn. If you like more than just salsa for dressing mix 1-2 TB of Ranch in with the salsa.
Put some frozen chicken breasts in a crockpot with 1/4 cup chicken broth, and 1 tsp each salt, pepper, garlic powder, and onion powder. Cook on low 8-9 hours and then shred. Portion out into your desired serving size and then you can toss the shredded chicken in whatever sauce you want. I like Franks Original and then making a wrap or salad with lettuce, red onion, tomato, and blue cheese crumbles or dressing. BBQ sauce is another great option to serve with roasted sweet potatoes and veggies.
To fix your pepper and onion sheet pan dinner just put the veggies in for 10 minutes before adding the chicken.
Stir fry broccoli, onion, red pepper strips, and snow peas in a hot pan with 1 tsp oil for 5 minutes. Toss in some sliced, cooked chicken and a TB of soy sauce and a few drops of sesame oil. Serve over your cauliflower hash browns/rice.
Saute your favorite veggies (mine are fresh baby spinach and mushrooms) in a pan for 3-4 minutes. Mix up 2-3 eggs, 1 TB Parmesan, 1 tsp milk, salt & pepper and add to the veggies. Either pop into a hot oven or scramble.
A basic smoothie recipe is 1 cup baby greens, 1/2 frozen banana, 1/2 cup frozen berries, 1 cup liquid (milk or water), 1 scoop protein powder. You can also add Greek Yogurt, nut butter, flax or chia seeds, etc... Often I will use chocolate protein powder and a tsp of unsweetened cocoa powder in a smoothie with dark sweet cherries to get my chocolate fix.1 -

Alright here is something for you... first of all don't even try to make something that is not.. for example Zucchini noodles to be like pasta noodles.. I have been hearing a lot on this and it drives me nuts the same goes for cauliflower.
Carbs are not bad nor are they fattening..for pasta there are high fiber pasta out there I think its by Rozine.. It's wonderful and it's good for you..
Potatos.. Nothing is wrong with potatoes.. keep the pealings on.. bake a sweet potate as you would a regular potato instead of smothering it with butter.. use sour cream and dill some salt and pepper.
Recipe for mash potatoes:
Boil regular potatoes 5 Lbs cubed along with 1 or 2 sweet potatoes cubed.when done, drain.
1/2 c of sour cream
1/2 c of cream cheese
Salt and beat well
Depending on potatoes how much you cook and moisture content you may need more or less sour cream and cream cheese.
Sour cream has 25 calories per Tbs.
Cream Cheese has 50 calories per Tbs vs butter has 100 calories per Tbs.
If you want to skip the cream cheese you can.
You can also make ahead and put in the crock pot and put it in the fridge the day or couple days before.
