Jambalaya Fatty - a creation from the smoker - lots of pics

Fat Tuesday is in a few days and it got really cold today and I wanted some jambalaya...so I decided on a jambalaya stuffed fatty. It made 7 slices about 1.3-inches wide and actually was only 357 calories per slice. For you skeptics, the bacon is thin sliced and the sausage is rolled very thin.

Headed to the smoker...hickory...maintained temp between 255F and 275F...
1 hour and 50 minutes later...
Wow! it was delicious! I will make this again!
