    I've been cooking vegetarian meals my whole life and LOVE to cook! I've carefully kept track of all of my favorite recipes that I've found over the years and wouldn't know where to start in terms of sharing! Do you have any cuisine you are looking for in particular? Ingredients you love? Or meat dishes that you miss and are looking for modified versions? Perhaps I can send you some specific recipes. Good luck on the switch!

    I made this Roasted Cauliflower Sweet Potato Soup today. It turned out thicker than a soup (which I could have thinned it down), but I loved it as is. I served it as a side dish (think mashed potatoes). I cut the amount of olive oil in half and used skim milk. My family loved it so much that I'm going to take it to my mom's house on Easter.

    "Sloppy BBQ Lentils"

    First, saute... (10 min+/-)
    1 tbsp(s), Minced Garlic
    2 medium, Carrots, raw
    1 medium (approx 2-3/4" long, 2-1/2" dia), Peppers, sweet, green, raw
    1 small, Onions, raw

    Then add...

    15 fluid ounce, Tomato Sauce
    0.25 cup(s), Kraft Original Barbeque Sauce
    1 tbsp, Balsamic Vinegar
    1 Tbsp, Organic Molasses
    1 tsp, Mustard
    1 tsp (1.8 g), Spices, oregano, dried
    And simmer (20 min+/-)

    Finally stir in...

    2.50 cup, Lentils, mature seeds, cooked, boiled, without salt
    And simmer (another 10-20min)

    This is by far my favorite; quick, easy, and very, very tasty.
