Low carb lunches... stuck!

Hi

I'm trying not to have too many carbs... but I get REALLY stuck for ideas at lunch times and get bored with salad. Any ideas anyone...? I eat eggs for breakfast so don't really want those.. but other than that I'll eat just about anything!

    here's what i do! it's pretty much my favorite lunch!
    - sandwich: 1 slice rye bread (not sure how many carbs that is, substitute whatever bread you like), turkey, onion. so it makes 1/2 sandwich. I add mustard!
    - salad: romaine, cucumbers, carrots, black beans, whatever you like with whatever dressing you like (not a lot of dressing though!!)
    - fruit: 1 piece of hand fruit or pineapple and blueberries! i know it has carbs but you need some!

    My favorite low carb lunch is tuna fish.

    1 can tuna
    1 tbs Miracle Whip
    1 tbs Newman's Own Light Vinagrette salad dressing
    1 tsp Grey Poupon
    1 stick celery chopped
    several cherry tomatoes chopped

    I either make lettuce wraps using large Romaine leaves or sometimes I will hollow out a cucumber sliced length-wise and put the tuna in it.

    turkey roll-ups are yummy!

    Try and get low-sodium lunchmeat if you can.

    Lay a couple pieces of turkey down flat, spread on reduced fat cream cheese, place 2 pickled asparagas spears (or pickle spear) and roll up. Yummy!!!:tongue:

    As I said, try and get low sodium lunchmeat as teh pickles and pickled asparagas spears have lots.

    I love homemade chicken salad - just cubed chicken breast, mayo, celery, onion, salt and pepper. I usually eat it right out of the bowl, just like that, but I've served it over lettuce before and loved it just as much.

    Just posted a recipe for meatloaf that's very low calorie and low carb...make it the night before and have leftovers!
