Okra stir fry!

I'm not a big fan of okra due to the slimy texture. This was my first attempt at making it edible without deep frying it and it went quite well.
Okra, halved and roasted at 400 for 15-17 min
Cherry tomatoes, halved and blistered on high heat in a pan
Red onion, thinly sliced and sautéed on low heat in butter while the okra roasted
Serrano pepper, minced and cooked with the onion
Garlic, thinly sliced and cooked with the onion
Lemon zest
Turkey bacon, roughly chopped
Parsley, roughly chopped
Black pepper
Lawry's seasoning salt
Dried thyme
I just tossed everything together after cooking separately and garnished with the turkey bacon and parsley

    Looks healthy and delicious. Interesting that you cut the Okra long ways. I usually cut it into coins, but I may tried that.

    I was just afraid to burn the okra while roasting had I cut it that way, since I've never done it before. I figured I was safer leaving them in larger pieces but I might try that next time seeing as this worked out fine
