I have been told, to make sure I stay under calories assigned when I joined. I have never come close to my limit. My question is, do carbs matter ? Fat ? I see people eating Tacos , Pizza, Dessert ? I love Stouffer's deluxe French. Bread Pizza. I never eat both Pizza's so I'm well below my calories However, carbs are high, does it matter ?

if you're well below your calories, and you're not going nuts, no it doesn't matter that your carbs are high.
For health I would make sure to get enough protein and EFA's and micronutrients, saving a serious rare condition, everything else is satiety and sanity and individual preference/quirks3 -
It's all about calories. But you shouldn't be under your goal, you should be AT your goal.6

Are you trying to lose weight? If so, then you have definitely eaten more calories in the past. Have you started replacing higher-calorie foods with vegetables and haven't adjusted to the large volume of food? Either that or you've just adjusted quickly to a sharp decrease in calories, and there's usually a rebound at some point. If you are sure you're tracking absolutely everything you're eating and drinking, and you're coming up short on calories, you can add in things like cheese, oil, and peanut butter to make up the difference.5 -
What is your calorie goal? How much are you eating a day?0

You were housebound which decreased your activity, so yes you were eating more calories than your body needed to maintain its weight. That's how weight gain works for everybody. I was at my highest weight and gaining eating healthy vegetarian for 4-5 years. No treats. I didn't lose weight because I was eating more calories than I needed to lose weight. See? Food type does not matter.
Junk food doesn't cause weight gain, Heck, I've lost weight eating it (alongside nutritious foods) every single day. You can still eat junk food alongside nutritional food and still lose weight since weight loss is ALL about calories. My 100+lb loss is proof.
Hitting your calorie goal is important to your overall health in so many ways. Not hitting your goal by a few hundred calories when mfp has already created a deficit for you if far more unhealthy than eating a little junk food daily to reach your goal (stated by my Dietitian).
Make sure you consume enough fats, protien and fibre.3 -

Well honestly, as long as you are meeting your protein goal, the others really don't matter. They are more for guidelines. As far as being under your calorie goal, being slightly under is nothing to worry about. I'd say 200 under at the most. If you want to be right at your calorie goal, get some ice cream0
