Quinoa with chickpeas, lime, cilantro, onion

Made this for lunch...dinner.....lunch......early dinner?

I used the juice of one juicy lime, one quarter of a red onion sliced thin (I used a half and that was too much) and then cut into slightly smaller pieces, a can of garbanzo beans (drained), a small bunch of cilantro leaves chopped up very fine (probably came out to aroudn 2 tablespoons chopped, it could take another 1-2 tablespoons with no harm if you like cilantro), and next time I would add a diced up jalapeno. I also wanted to add some garlic but I couldn't figure out how to get it in there without cooking it down in oil and I didn't want to do that. Salt, pepper, and about half a tsp of cumin (I just sprinkled til I was happy though).

While the quinoa was cooking (I made 1 cup uncooked - so about 2-3 cups cooked?) I took all the other ingredients and mixed them up, really let it all soak together to get the flavors mixed up. You could use black beans but I had a picky eater. Once the quinoa was done I let it cool a bit and then mixed it all together - the quinoa picks up the onion-lime-cumin-salt-pepper flavors very nicely.

IT would have been really good with tomato (sort of like a salsa with quinoa!) but my little sugarplum hates tomatoes. You could also add some other chopped up veggies.
