Egyptian Lentil soup

A delicious, healthy and high fiber soup. Very easy to prepare. This makes about 15 portions so ideal for bulk cooking. Freeze to use later.

1kg bag of lentils
3 medium onions
6 carrots
Celery stick.
4 tablespoons of tomato purée.
Teaspoon on cumin, turmeric.
Salt and pepper to taste.
Stock cube of choice.

Soak lentils.

Prepare veg. Roughly chop all veg. Put into a pot with spray oil and cook until onions are lightly brown.
Add lentils with the water. Bring to boil. Leave to simmer for 30mins, adding more water as necessary.

Leave to cool slightly blend to consistency you like and serve.

About 110 calories per portion.
