Cooks/Bakers - Help Tweak Cookie Recipe

I have a nagging sweet tooth, and I love no-bake chocolate peanut butter oatmeal cookies. But I'm thinking this recipe could be a lot healthier!

I'd like to increase protein by adding protein powder. I'd also like to decrease the insane amount of sugar. I'd love to hear suggestions from those who bake/cook a lot!

Here is the original recipe:

Ingredients

2 cups sugar
4 tablespoons cocoa
1 stick butter
1/2 cup milk
1 cup peanut butter
1 tablespoon vanilla
3 cups oatmeal
Waxed paper

Directions

In a heavy saucepan bring to a boil, the sugar, cocoa, butter and milk. Let boil for 1 minute then add peanut butter, vanilla and oatmeal. On a sheet of waxed paper, drop mixture by the teaspoonfuls, until cooled and hardened.

    Maybe try slenda or truvia instead of the sugar. Agave syrup might be another option but I have never tried it.

    You can replace the sugar with Stevia. I've used it in baking and it works beautifully. The volume of Stevia is 1/3 of sugar to achieve the same sweetness without the calories.

    Add a scoop or two of protein powder to see how it tastes. Fun with Home Economics! Let us know how the recipe goes!

    ETA: You can also substitute flax seed meal for butter! More fiber and great fat!

    Light butter or maybe even applesauce instead of real butter
    Almond milk instead of whole milk or 2%
    Granulated splenda instead of sugar
    If you have PB2, you could use that instead of peanut butter, but personally I don't like PB2 in baked goods.

    These are my all time favorite cookie! I am not sure agave would work because it wouldn't crystalize and harden the way it should.

    Stevia might work...

    I used to add nuts or rice chex to mine, not sure if it made them healthier though.

    Ahh...my husbands favorite cookies! We call them "No-Bakes" though. All i can tell you from past experience...is that you cannot alter the recipe very much. Because it is a no-bake cookie, the listed ingredients are essential to making the cookie just right. Good Luck though!!! If you are able to tweak it..let us know. I know my husband would be very grateful to you if I start making them again!!! :tongue:

    I know you asked to tweak the recipe that you have...but I have another one you might want to try also :)

    Gluten free peanut butter cookies

    cals 100 fat 6g carbs 11g
    makes 24



    1c crunchy or creamy natural peanut butter (I'm sure regular peanut butter would work the same)
    1/2c brown sugar
    1/2 c white sugar
    1 egg
    1 t. baking soda


    Preheat oven to 350. Spray cookie sheets with cooking spray. Combine peanut butter and sugars with hand mixer, mix for 2 mins. Add egg and baking soda, beat 2 more mins. Roll cookies into balls, partially squish flat with hand, make a criss cross on top of cookie with fork, flattening to desired thickness. Cook 10 mins, LET COOL ON COOKIE SHEET FOR 2-5 MINS (if you skip this step, the cookies will immediately fall apart.) Enjoy :)

    Makes 24 cookies

    try plugging it into the recipe builder. The whole recipe is about 4400 calories. Depending on the number of cookies, they might not be so bad the way they are. I can't remember how many cookies a batch makes, but if its 36 cookies, that makes em about 122 calories each.

    Anyway. I am going to watch this thread to see if anyone gives you a stellar replacement idea!

    I edited the post, but they have to cool on the cookie sheet, not on a

    and in the recipe I posted you could probably swap out the sugar for granular splenda, and I know splenda makes a brown sugar mix too......but you could use all splenda also. I have made it with just all regular sugar and it tastes good also.

    I tried the second recipe I found, the one that called for light maple syrup. I made it with chocolate protein powder instead of cocoa powder. It just didn't have the right texture, and the vague maple syrup flavor didn't taste right to me. Will try the original recipe with granulated sugar substitute, half cocoa powder and half protein powder.

    Im against stevia, so not going to recommend that...I would recommend cutting the sugar to only 1 cup though (the peanut butter should make up for this sweetness-wise), and adding 1/2 tsp of salt. Use whole wheat oatmeal, use 3/4 stick butter, use reduced fat milk. Use real peanut butter (better for you).

    Someone made some sugar free ones for a bbq I attended yesterday. They were quite delicious.

    i_love_vinegar, why are you against Stevia? Do you feel that way about all sugar substitutes?

    I make them by substituting one of the cups of oat meal with bran. And then I also like splitting the butter half with coconut oil, but then I am in the camp that coconut oil is a good saturated fat. I also like to sometimes substitute baking chocolate for thecocoa which seems to me to be healthier chocolate but that might just be crazy talk. But I do feel like I can move to 1.5 cups of sugar by using it.
