I am gluten free due to Lyme disease. Also sugar, caffine and alcohol free. It's hard at first then becomes second nature and you don't miss it. I was a chef for 10 years so luckily I have a vast knowledge of food so modifying recipes comes easy.1

My husband is celiac so whenever I make dinner for us both it's gluten free.

Me too. I was diagnosed as lactose intolerance for 30 years. Finally, got a good diagnoses of gluten intolerant and it took over a year of avoid gluten for the lactose problem to disappear. I am now enjoying regular milk.
I think I might also have a problem with corn since corn starch as a thickener bothers me. Any help in that area would be appreciated.0
