Fattening recipes anyone?

Good morning -
While I have been on a diet almost since birth, I am not looking for weight loss help today.
My Mama, who weighs only 85 pounds, DESPERATELY needs to gain weight. Her "activity" is low, but she is on oxygen full time (6 liters) and is constantly struggling to breathe, so I set her up on light activity to determine her caloric needs. (The doctor said she is expending more calories than she is taking in, simply by breathing.)
I just got her set up on MFP - although she isn't a "friends" kinda person, because I wanted her to be able to track her intake.
Mama doesn't have a huge appetite, which means she isn't taking in a lot of food. Of the 1640 calories she needed yesterday, she took in about 1310. Not great - but better than I would have expected.
Any thoughts on high fat, high protein foods that are NOT too filling? I have Mama set up to gain a pound a week, but this looks like it could be a challenge.
Any help would be more than appreciated here. She's been sick for awhile is on Hospice, but, well, I am not ready to let her go yet.

I think a healthy way is meal replacement shakes btw meals - so doubling calories intake but without large portions or fatty foods..?

Healthy, calorie dense foods. I am not sure if she has any dietary limitations, but I suggest the following:
Nuts: whole nuts, nut butters, ground up nuts used as a coating on chicken...get them in where you can.
Avocado: plain, guacamole, sliced on sandwiches or in salads
Cook in olive oil, not cooking spray, and don't be skimpy, e.g. cook a chicken breast in 1 tablespoon of oil
Protein shakes or meal replacement shakes
Full fat dairy (milk, yogurt, cheese)

Unfortunately, most high-fat and high-protien foods tend to be VERY filling, but if eaten every couple of hours can really help one out.
Try some nuts like almonds, walnuts, pecans; or avocados (chips and guacamole anyone?); protien bars like luna bars would help with nutrient intake, as would cliff bars; eggs are always a good choice - whole hardboiled ones especially.
Smoothies made with full-fat yogurt are also a good choice.

I also think shakes are a good idea. One with a good amount of protein would be good.0

She probably wants to eat every 3-4 hours, if she's able. the problem with lung issues is that they're probably spending about 600+ calories a day JUST trying to breathe. I'd suggest making her smoothies with fresh fruit and some low sodium protein powder. Whey protein is a nice calorie boost and not too expensive. You can also suppliment her meals with Boost or Ensure if she likes those.0

My mom also has a difficult time eating enough calories. I make her protein packed granola from whole foods. 1/2 a cup is close to 500 calories so it's an awsome way to start the day. I'd be careful adding too much cow dairy many older people can't tolerate it any more so go raw or try goat milk. Smoothies are an excellent choice again from real food, but if you need to add protein use whey isolate it's easier on the system.

Mommy has actually learned how to log all of her stuff on here by herself. (She hates doing many things online, so this is exciting. lol)
Found a few different brands of meal replacements yesterday - containing 13-14 grams of protein and 350-360 calories each. They are only 8 ounces, so she is going to try to drink those for her mid-morning and mid-afternoon snacks. Hopefully they will work.
