I don't eat or sleep on normal schedules.
So, let's say I eat a banana at 1 AM, or 2 AM, or 3 AM, or 4 AM. Then I go to sleep and wake up at 1:00 PM. Does that foot go on today's food diary, or yesterday's?

I would personally log it for today's food diary if it occurred at that time for simplicities sake. A lot of people focus on weekly calories with success so I don't think a couple hours of difference should effect things too much for you!1 -
If I have calories left from yesterday and I haven't been to sleep, I put it on yesterday. If I wake in the middle of the night and eat a bowl of cereal (bad habit) I still put it on yesterday if there are free cals. Otherwise, I put on today. Like katadx said, many focus on weekly. I prefer to focus weekly because if I know I am having friends over for the weekend I can cut back during the week to make room for tasty craft beers with the guys.1

Is there a setting on the website/app that lets me do a weekly calorie log instead of a daily one, or is it just something to keep track of on my own?0

Its up to you, but as long as you're consistent it won't really matter.
Some log midnight to midnight as one day. Others log from the time they wake up til the time they go to bed. In the end, its not important.1 -
I don't think MFP has a setting. If I know I am going to go over my cals on the weekend, I take the planned amount and divide by 5 to spread that extra deficit out over the work week. If MFP gives you 1500 a day, you get 10,500 a week, for example. You could take the daily cal allowance MFP gives you, multiply by 7. Then keep a running tab at the end of each day to see how close you are to your weekly allowance. Be careful that you don't eat too much early in the week and end up with no calories in the later part of the week. I hope this helps. Good luck.1
