fiber-tastic blueberry Crisp
Just made this last night for some friends coming over tonight... tried just a bite and it was great!
Ingredients:
2 cups fiber one origonal bran cereal
3 cups fresh blueberries
3/4 Cup splenda
a liberal shaking of cinnamon (I jused probably about 2 tbs
about 2 tbs of lemon juice
1 tbs 45 calorie vegetable oil buttery spread.
Directions:
1. spray a glass pie pan with cooking spray and layer 1 cup of the fiber one on the bottom
2. Mix together 3 C blueberries, lemon juice and a liberal shaking of cinnamon (no calories or sodium and it boosts your metabolism... if you like cinnamon, don't be afraid to use a lot) and 1/2 C splenda together, pour over the fiber one crust
3. mix remaining 1/4 C spenda with the remaining fiber one... you can pour more cinnamon in this mixture too if you like, top the blueberries.
4. top with the buttery spread broken into little pieces.
5. Bake at 350 for half hour.
Makes 4 Servings: 133 calories per serving with a whopping 16g fiber per serving! enjoy!

I have a ton of frozen Blueberries to use up and this may be just the ticket. I'm going to have to splurge with butter instead of vege oil, but don't think it will hurt my calories too much since it's not much butter.

Thank you, thank you! I had just resigned myself to wasting much of the huge tub of blueberries I got on sale yesterday when I found this. It came our super-delicious and easy too. Also, my new favorite snack is now the uncooked "filling": blueberries + lemon juice + cinnamon + Splenda = excellent.0
