I am just so confused?

I am just so confused in what to do.
I have been lean bulking for more than 6 months. I was regularly eating a craft pasta and misread the calories. I was having that every 2 days. So my calorie intake was higher than I assumed.
I have now removed that. I was thinking of keeping the calories the same and check my weight next Sunday. I can then see how much I gain in a week.
I was over my calories by 1000 shall I reduce my calories this week to even out the over surplus.

I was gaining weight ok. I don't want to cut and lose the size I have made.
I have been skinny fat all my life. I don't know what to do.
