Different scales will not agree.
Weight loss is not linear.
The 3 lb loss when you moved to a low-carb diet was probably mostly water weight as you depleted your glycogen reserves.
Have you used MFP or another calculator to determine your calorie goal? Are you tracking your food intake to ensure that you are eating below your maintenance level?1 -
Only compare weigh ins from the same scale, scales will vary in their readouts as they are all calibrated a little differently. Try to minimize as many variables as possible - try to use the same scale, the same times of day, the same outfit or nude. All of these things will cause "weight" changes.
It is typical to see a large immediate loss when you cut carbs.
It is typical to see temporary gains when you start and/or change up an exercise routine.
Track your progress over 4-6 weeks, watch the trend and see if you are happy with your average loss rate. Do not take any one weigh in too seriously, there are many things that cause temporary weight increases or decreases. If after 4-6 weeks you are unhappy with your results then it is time to re-evaluate your plan.

If you've lost 2.5 lbs in ... what, a week? less than a week? ... no, I don't think you should cut your calories anymore.
