Dieting Problems

I have completely changed my diet in the last two weeks and I've lost 8 pounds. I'm trying to get a good balance on calories, fat, carbs, and protein while watching my sodium intake as well. I've got 2 problems though:

1) I am getting burnt out on my food and need more suggestions on low carb meal/snack options.
2) I am not eating enough calories for healthy weight loss (so says MFP). I am struggling to eat enough calories but stay below my carbs (especially) and fat.

I am already eating when I'm not hungry just to get the calories in. Today I only got 900 (out of a 1340 goal, not including exercise). When I started this journey I figured the exercise would be the hard part!

I guess what I am looking for is for some suggestions on daily meals (breakfast, lunch, dinner, 2 snacks). I'm aiming for low carbs/sugar. Thanks in advance.
