Peanut Butter Fudge Babies
I made these because I love PB and chocolate. They are similar to homemade Larabars but I make mine into bite sized pieces.
1 ounce almonds
3 ounces pitted dates
1/4 tsp vanilla extract
2 TBSP peanut butter
1 TBSP honey
2 TBSP unsweetened cocoa powder
Process all in food processor - takes about 2 minutes. Using a small cookie scoop, form into balls and place in mini cupcake papers. Makes 18 babies - 60 calories each

You can use raisins in the place of dates. Or dried apricots. Those are the only two I have dried but other dried fruit might work just as well. makes 12 babies not 18. Sorry0
