Healthy coconut recipes?

I made some coconut milk/cream on a whim and now ive no idea what to do with it? What are everyones favourite healthy ways to use it? I was considering a curry maybe

    I made this "moqueca" last week. Very good. Used cod, as it was freshest at the fish counter, and it was fine.

    Also, it is possible to use your coconut milk as the cooking liquid for rice dishes, to make coconut rice. There will be a bunch of recipes online for doing this. I also make a "Caribbean banana chicken" dish that uses coconut milk to poach the chicken. The list goes on ...

    It was a little late last night. I also meant to say that I tend to use the full-fat, commercial, unsweetened, canned coconut milk for cooking (and sometimes the "lite" versions). I don't know the potency of your hand-made batch.

    I bought coconut milk for this cake, and we had plenty left over, so my husband tried it on cereal. He loves it! You could also use it in protein shakes or smoothies.

    I make red curry often. I usually use tofu or shrimp as my protein and cut up tons of fresh vegetables (squash, zucchini, eggplant, bok choy, onions, mushrooms, peppers, carrots, broccoli...whatever is available). Saute it all in a little oil, add some red curry paste (I use Thai Kitchen brand) and a can of coconut milk. I will add a little chicken stock if I need more sauce. Serve over jasmine rice.

    Made coconut rice tonight as a side to grilled marinated skewer chicken. See foodwishes.com for the rice recipe (search on "coconut" and it should pop up first or close to). Since the chicken marinade was lemony, I added some lime zest/juice to the rice before serving so the combo had a bit of an island flair. Uses a can of coconut milk to replace some of the cooking water. Added some toasted-at-home shredded coconut (Bobs Red Mill) for a bit of crunch at the end.

    In the picture, the rice is under the chicken. You can see a patch of the toasted coconut off to the side.
