BLACK BEANS
Wow! these are great! They don't make you gassy and they are wonderfully high in minerals and fiber.
They don't have a strong flavor, so you can throw them in salads (great with lowfat italian dressing and a little feta cheese), spaghetti, corn, tacos, casseroles, turkey or avocado whole wheat wraps, etc.... You will want to make sure that you rinse them well if you buy the canned beans, they have oil on them.
They stick with you a LOOONNNGGG time. Here's a recipe for tortilla soup with them in it.
2 sm. cans or 1 lg. can of chicken and rice soup.
2 cans of Rotel, drained.
4 boneless, skinless chicken breasts.
4 cans of fat free chicken broth.
Put together in a soup pot. and cook until chicken is done.
Cut chicken into cubes or shred.
Return chicken to pot.
Add 16 oz of frozen corn and simmer until corn is cooked.
Add 1 - 2 cans of black beans, rinsed and drained.
Long grain rice can be added for extra thickness for a complete meal in a bowl.
Serve hot with lowfat sharp cheddar cheese sprinkled on top.

You can also use nlack beans to make brownies...in place of flour. There are tons of recipes on the net.0

...and of course, good ol' beans and rice. Made some the other day with turkey sausage and spinach. It is even better with mushrooms added.1

COWBOY CAVIAR
1 can black beans, drained
1 can white corn, drained
2 avocados, diced
2 roma tomatoes, diced
1 bunch green onions, tops only, diced
Mix together and stir in the vinaigrette:
¼ cup roasted garlic avocado oil (Olive Cart sells it, otherwise use EVOO)
¼ cup red wine vinegar
1 tsp salt
1 tsp pepper
1 tsp garlic powder
