Eggplant Fries aka My French Frie Alterntative

I've always been a fiend for my vegetables, so when I found this recipe, it was so easy and so good it only made sense to use it as an alternative to what's probably my biggest food addiction...french fries.
1 medium/large sized eggplant cut into 1/4 inch sticks
1 egg
1/4 - 1/2 cup Panko breadcrumbs
1/4 - 1/2 tspn crushed red pepper (I use more because I like mine spicey)
Parsley & garlic salt to taste
Mix your panko and spices in a bowl, dip your eggplant in the egg and then into the breadcrumb mixture. Bake at 425 for 10 minutes on each side or until crispy but not burnt.
Serves 2, but at roughly 320 calories for the pan, I don't feel guilty hogging the entire pan and eating it for dinner!

Thanks for that... I had eggplant fries at my local Italian Restaurant but I'm sure these were deep fried.,.. now I'll make my own.0

I think I's sub straight garlic for the garlic salt. I have enough issues with sodium0

The original recipe called for 1/2 cup of grated parmasean in addition to the rest of the ingrediants. They were good that way but added about 600 calories.
I started skipping the parmasean and never even noticed a difference!0 -
