Office Potluck...I need a little luck

It's nearly time for my team's monthly potluck. While my team supports my changes and they are trying really hard to work with them, I'm walking into a very carbalicious potluck soon. I volunteered to bring in dessert (I'm making a whole fruit granita), but I want to bring in something with minimal "traditional" carbs (there will be biryani, wasabi noodles, udon noodles...) but packed full of veggies and lean protein that isn't "stinky."

Not to mention there are a few dietary restrictions: no pork, celery, beef, nuts, or coconut.

Does anyone have any suggestions? Any awesome recipes? Please help! I have to finalize the menu over the next week or so.

    I always get rave review with this summer salad.
    · 1 can rinsed black beans
    · 3 cans drained sweet corn
    · ½ diced sweet onion
    · 1 diced English cucumber (remove seeds
    · 1 diced bell pepper (red)
    · 1 bunch died parsley
    · 3 tbs olive oil
    · 1/2tbs red wine vinegar (check this)
    · Salt and pepper to taste

    I think something cucumber would go with all those different dishes. Maybe a yogurt cucumber salad, or Asian cucumber salad or a fruit salad with cucumber.
