Triple Melon Salad Over Field Greens - AMAZING!!!

I am not much of a salad person. However, i chose this as my lunch today at work and its awsome I must say. Thought I'd share with you all. The only thing about this salad that I dont like is there isnt much protein. So Im thinking of adding some grilled chicken to it.

Yields 6 Servings

Ingredients:
2/3 Cup of each --- Diced Honeydew, Cantaloupe
3/4 Cup of each --- Diced Strawberries, Watermelon
1 1/2 tsp Olive Oil
2 tbsp Orange Juice
1 tsp Soy Sauce
1/2 tsp Lemon Juice
1/4 tsp Garlic Minced
1/2 tsp Ginger Root Minced
1/8 tsp Dijon Mustard
6 oz Spinach
6 oz Mesculin Greens

Dice fruit and combine in bowl. Set aside. To make dressing, combine Olive Oil, Orange Juice, Soy Sauce, Lemon Juice, Garlic & Ginger Root and Dijon Mustard. Mix well. Mix spinach and greens and place on plate. Top with 1/4 Fruit and tbsp dressing.

1 serving = 38 Calories. 1gm fat. 46gm carb and 1gm protein.

    Sounds good! I dont like ginger but this would be great with a poppyseed dressing.

    Honestly, you cant really taste the ginger or garlic even. I taste mostly the orange juice!!! :)

    I honestly don't know...more just hoping! I will probably microwave the strips and tuck them into the sides of the bowl...test one dipped into the salad before flinging them all on...safety first haha :happy:

    Something is off with the calorie count though. My boss just looked at it and he says it doesnt look right.... Does anyone know how to break it down based on the fat/carbs & protein?

    Nevermind, I think I figured it out. And please correct me if Im wrong. 197 Calories total.
