Tuna was my plan for the day, and I brought everything for the sandwich, but the tuna... I think I might need more smartfood :)

I am having lean cuisine spring rolls. I would usually have a salad and a variety of other things but I'm sick and I needed something quick and easy.

I'm doing the same thing a lot of people are. I'm getting a salad. There's a local place that has an amazing salad bar that I just love. This accomplishes 2 things. 1) it gets me out of the office for at least a little bit of a break. 2) I get an amazing salad with all kinds of colors and flavors.

Lately, I've been filling up my salad box with sweet bell peppers, pea pods, hard boiled egg (I'm mostly taking just the whites if I can help it), carrots, onions, and whatever other veggies look spectacular on any given day.

I am having a spinach salad with crumbled blue cheese, slivered almonds and dried cherries and a vinagrette to top it off :) Mmmm

You can substitute goat cheese or feta for blue cheese or whatever! I know it's not everyone's cup of tea.
  • cleaning out the fridge here:

1/8 cup garbanzo beans cooked with thyme, a bay leaf, and I forget how many cloves of garlic
    1 cup julienne cucumber
slivered remnants of a Vidalia onion
    1/4 cubed avocado
    tbsp of crumbled feta
    black pepper
    squirt of lemon

It was Subway for me. My workout this morning ran a little long (... or maybe I just didn't get up early enough, haha), so I didn't have time to pack a lunch before work. I walked three blocks to Subway and got the footlong BLT on 9-Grain Wheat. I HATE mayonnaise, so it didn't hurt my feelings at all to leave it off. Only ate half of it -- saving the other half for tomorrow. (It's a $5 footlong, so much cheaper that way!) Also got my favorite chips OF ALL TIME, Baked Cheddar and Sour Cream Lays. I was kind of worried, but it was still only around 500 calories, total. Not bad.I've still got a 2.5 mile run to do tonight, too.
