Kale recipes needed

Greetings! It has been a banner year for kale in my garden! It hasn't gotten that hot yet in Ga, so the kale is still thriving... But things are bound to change, so I'm looking for recipes, ANY RECIPES, for kale! Smoothies, Salads, ETC!

Kale chips are the best things ever. I could probably eat a head's worth of kale chips in one sitting if I let myself. I also had a kale salad with pears and toasted walnuts and feta once, that was quite good.1

thank you, Spiegelchan! i just made this recipe, but used kale as the base (used more than called for)and cut the olive oil to 1/4, and used butternut squash, bc that's what i had on hand

Kale and Egg Muffin Pan Bake
Ingredients
8 eggs or equivalent in egg beaters
4 Tbsp milk (I use unsweetened almond milk)
1 large handful kale, chopped
1/2 C light sharp cheddar cheese, shredded
Directions
Preheat the oven to 400˚F. Lightly spray a nonstick muffin pan with cooking spray.
Whisk eggs and milk in a large bowl. Divide chopped kale in the bottom of each muffin cup. Spoon 3-4 tablespoons of egg and milk mixture into each muffin cup. Place a large pinch of shredded cheese over top of each muffin cup.Bake 15-20 minutes, until puffed and golden. Let cool 5 minutes before removing from pan. Makes 10-12. I enjoy for breakfast, lunch or dinner these with some salsa on the side.
Reheats well in microwave, also freezes, so it is a great recipe to make ahead and have on hand. I also appreciate the the portion control muffin cups provide!

This is legit an all time fave in our household. It's so simple and SO good. Can serve with a side of chicken breast or sausage for a meat component if desired.

Made this with lentils rather than white beans and my spouse loved it even though he doesn't usually like soup.
I often add kale to pasta dishes of all kinds (especially pesto pasta), smoothies in moderation, and make kale chips. Cassoulet is a fave for my aunt.

I did a kale, ricotta cheese, onion and egg flat bread. Take some ricotta, mix it with some lemon juice, salt/pepper, fresh basil. Spread it on a flat bread. Top with chopped olives and chopped kale. Crack open an egg on top. Bake in 425 degree oven until egg set. Top with caramelized onions0

super simple but I like to saute with a lot of garlic, olive oil, hot pepper. top with parmesan a sprinkle of nutmeg (weird, but it is fantastic) and toasted slivered almonds or pine nuts. Sometimes I add chickpeas.0

"Barbara Kingsolver Greens." Recipe in "Animal, Vegetable, Miracle." In essence: onions, carrot, sun dried tomatoes, any green (kale's my fave). Poach eggs in this mix, or eat as is.
Kale and mushroom stuffed omelette.
Steamed kale stirred into sautéed garlic and anchovies. Over pasta maybe.

I made this salad and my visiting friend said, "Ew, is that kale?" Then she tried it and loved it! I like it, too.
