Delicious Sandwich Creation!!!

So my mom and I went to a movie at 5:40 the other night and didn't get back until around 8 and neither of us had eaten dinner, so I opened the fridge and discovered there was just a bunch of random things. I didn't feel like cooking so I grabbed a few things, threw them together, and made the BEST sandwich EVER.

Ingredients:
2 pieces Aunt Millie's Healthy Goodness Light Whole Grain Bread (35 calories each)
a handful of fresh baby spinach (half cup = 3 calories)
a handful of raw mushrooms (half cup = 8 calories)
1 slice Sargento Reduced Fat Swiss Cheese (60 calories)
1 tablespoon Kroger Organic Apple Butter (30 calories)

Directions:
toast the bread until thoroughly crisp (important: if they're not crispy, they'll get soggy and disintegrate). take one slice of bread and place cheese, then raw mushrooms, then baby spinach. Don't be afraid to pile the spinach high--the leaves will wilt and lie flat. Microwave for approximately 45 seconds (or until cheese has melted and spinach has wilted). take the other slice of bread and spread the apple butter, then press firmly on top of the other half. take a bite and float off into heavenly delight :))))

    Hmm. I've never thought about adding Apple butter to a savory veggie sandwich before, but that does sound like it might be good! Thanks for the tip!
