For example with a good old fashioned pedometer?

Sure. Enter walking as an exercise, such that it comes out to how far you walked. Pace doesn't really affect calorie burn much for walking, at the speeds people normally walk.1

Log any walking you purposely do for exercise, set your activity level to cover the rest.1
